A SHANKLIN cafe-restaurant has made its delicious Old Shanklin Pie in the iconic shape of the Isle of Wight.
Already known for their homemade Isle of Wight-shaped scones, Vernon Cottage has now put its Old Shanklin Pie — packed with slowly roasted lamb — firmly on the Isle of Wight map with a special Isle of Wight Day edition.
Owner Susan de Vere said: "My husband, artisan baker and chef, Paul, fashioned a piece of steel into the shape of the Isle of Wight to make these pies and I'm incredibly proud of them."
Paul added: "My wife comes up with these madcap schemes and I have to find a way to create them.
"Always tricky, but I think this special edition Old Shanklin Pie is what you would call a 'result'."
How to make Old Shanklin Pie
Best quality joints of lamb are slowly roasted overnight for 16 hours. After cooking, the fat is removed and the meat is put back to marinate in its own juices before being broken up and layered with fresh spinach, chantenay carrots for extra sweetness, topped off with shortcrust pastry and served with home-made mint gravy, vegetables and choice of potato.
